Overview
Brasserie Tatin is a classic French Brasserie with distinctly contemporary twists. Tatin’s creative French cuisine is made with the freshest ingredients sourced from Baltimore’s best local purveyors. Tatin offers dining its lounge and dining room for dinner and Sunday brunch. We also offer a beautiful private party space, the fully equipped French Door banquet room. In the summer, guests can dine on our open-air terrace, with its echos of Paris.

Who we are
Gerard Billebault
Paris born, pastry chef and Boulanger Gerard Billebault was the executive pastry chef at the world famous, Le Bec Fin in Philadelphia. Since moving to Baltimore, with wife and partner, Gayle Brier, they have opened and continue to operate a commercial bakery, The French Oven, and Bonjour, a café, patisserie.
Gayle Brier
Gayle spent most of her career in the advertising and marketing business in Philadelphia, before meeting and marrying Gerard. “How could I resist those warm loaves of bread… and the man wasn’t bad either.” After selling her ad agency, she came to work full time with Gerard, and together have created this small food business empire.
Chef Stephen Blaser
Born in Bern, Switzerland, and European trained, executive chef Stephen Blaser brings to Brasserie Tatin superbly executed traditional French fare as well as the broader European cuisine.
Marc Dettori
Marc, born near Lyon, has been a fixture on the Baltimore restaurant scene for more than 20 years. Hosting at some of the finest restaurants in the area and well known for his knowledge (and deep love) of wine has filled the Tatin cellar with interesting and well priced vintages.
